Heifer Station vineyard is situated between 860-900m elevation on the undulating slopes of Mt Canobolas. Shiraz was planted in the vineyard in 1999 and makes up 3.8 Hectares of the 25 Hectares of fruit under vine.
During the growing season the vines are both shoot and bunch thinned by hand to reduce yield. The result is a small but quality crop of around 5 tonnes per hectare. Fruit was picked in late March after an ideal growing season and received at the winery in excellent condition.
The fruit is then left whole in open fermenters where native or wild yeasts start fermentation, which continues for around 18 days. During this period the fruit is punched down daily to extract colour and tannin. The wine is then split between 1/3 new French Oak and 2/3 Old French Oak barrels for a period of 8 months.
An elegant cool climate style of Shiraz with succulent plum and black cherry fruit character in abundance on the nose and soft savoury tannins across the palate. The wine is underpinned by spice and earth tones. Medium bodied, textural and moreish with abundant forward fruit flavours. The wine is balanced with natural acidity carrying the wine.
Aubergine hues to crimson red at its heart.
