The marriage of Pinot Noir and Chardonnay in this wine, coupled with its time on lees has delivered a sparkling wine with great balance and complexity. The wine has a lovely nuttiness with a brioche character. Some honeysuckle and grilled citrus characters make for added interest. A fine bead, persistent mousse and mineral acidity give structure to this delicious example of Methode Traditionnelle.

Heifer Station vineyard is situated between 860-900m elevation on the undulating slopes of Mt Canobolas. The high altitude and aspect of the vineyard coupled with the maturity of the Chardonnay and Pinot Noir at this site make for a stunning sparkling wine with great complexity. The fruit is carefully hand-picked to ensure premium quality.
2011 Was a cold wet year for the Orange region, white wines and sparkling varietals did well as optimal ripening is not required and crunchy acidity is plentiful. Pinot noir, Pinot Meunier and Chardonnay combine in this classic style.
The marriage of Pinot Noir, Chardonnay and Pinot Meunier in this wine, coupled with its time on lees has delivered a sparkling wine with great balance and complexity. The wine has a lovely nuttiness with a yeasty brioche character from its extended time on bottle lees. A small batch made with fruit from one of the highest vineyards in Orange.
