Background

Heifer Station vineyard is situated between 860-900m elevation on the undulating slopes of Mt Canobolas. Since 1999 the vineyard has a history of producing high quality Chardonnay. Chardonnay is one of the more prolific varieties grown on the property.

Vineyard Notes

2017 Was a warmer than usual harvest at Heifer Station – Chardonnay fruit at the Eastern end of the Bull Paddock Vineyard ripened nicely in the morning sun. The canopy was kept fuller on the western side to minimise the effects of afternoon sun. The fruit was hand-picked at 12.5 Baume to retain some crunchy acidity.

Winemaking

Once received the fruit was gently whole bunch pressed over 6 hours to minimise extraction. Once settled the juice was racked to a combination of premium new French oak puncheons and 2nd and 3rd fill barrels. The oak was toasted medium long. After racking to oak the wine is left to mature on fermentation lees for 12 months.

The wine went through full malolactic fermentation which helped to establish texture and for yeast autolysis to occur. Batonnage occurred every 7-10 days to further build mouth feel.

The Bull Paddock Chardonnay is a barrel selection wine with only the best barrels making the final cut. The wine is tasted many times in the lead up to assemblage. The wine is produced only in years when the fruit is of the highest quality.

Tasting Notes

An elegant cool climate Chardonnay that displays a hint of vanillin on the nose with subtle lees interest.

Bright white peach, green apple and citrus notes carry the pallet. Medium weight, complex and textured.
